The Blunder of Not Checking Egg Freshness
Fresh eggs straight from the farm have a superior taste and texture compared to those that have been refrigerated. They have higher water content and lower air cells, resulting in a creamier yolk and firmer white. Moreover, they contain more essential vitamins and minerals.
It’s crucial to check the freshness of eggs before using them. As eggs age, the air cells enlarge, making the yolk less firm and the white less viscous. To check their freshness, gently place the egg in a water bowl. If it sinks and lays flat on the bottom, it’s fresh. If it stands upright on the base or floats, it’s familiar and should be discarded. Using fresh eggs will result in better-tasting and visually appealing dishes.
