It’s crucial to check the freshness of eggs before using them. As eggs age, the air cells enlarge, making the yolk less firm and the white less viscous. To check their freshness, gently place the egg in a water bowl. If it sinks and lays flat on the bottom, it’s fresh. If it stands upright on the base or floats, it’s familiar and should be discarded.
