Why Room Temperature Eggs Are Essential for Perfect Cooking Results 

Chef Robert Irvine recommends letting eggs sit at room temperature for four to five minutes before frying, contrary to the widely held belief that egg temperature is inconsequential. Cold eggs from the fridge tend to contract rapidly due to the temperature difference between them and the hot cooking medium.

This contraction causes the eggs to adhere to the pan and break apart, marring their presentation. Conversely, allowing eggs to reach room temperature before frying results in a smoother process, even cooking, and an enhanced texture and appearance.
